The taste reveals a vibrant texture, abundant in fleshy white fruits, orange, and citrus flavors, all enhanced by a refined acidity and a lengthy finish that is both mineral and slightly salty.
The grapes, ranging from vines aged 10 to 80 years, are handpicked in October. Jean-Marc oversees the winemaking process, employing a combination of 2/3 direct pressing and 1/3 skin contact over three days. The fermentation takes place in 225-liter barrels (with 5% new oak) and 2,500-liter foudres. Following this, the wine ages for six months in both barrels and foudres. This cuvée stands out as one of the finest dry white wines from the South-West of France!
