Babche is the Timboon-based project of our friends Niki and Tim, centred on their small vineyard and farm in south-west Victoria. Planting began in 2021 on a cool, maritime site of clay and limestone, with chardonnay, pinot noir and cabernet franc established at high density under organic management, with biodynamic influence.
Alongside their own site, they work with a limited number of growers within Victoria whose farming aligns with their approach. All wines are made in Timboon in small volumes, with hand harvesting, natural ferments, and no fining or filtration. Additions are avoided, and the wines are bottled as they are.
The name “Babche,” a Slavic word for grandmother, embodies Niki's North Macedonian heritage, and memories of her Grandmother, who made family wine at her home, and inspired Niki to pursue a lifestyle that reflected her memories living close to the land, nature, and embracing simplicity and transparency. This ethos is reflected purely in each of their wines.
