Simha Paysan Fleur Sauvage nv

Crafted using techniques typically reserved for red wine, this chilled, amber-hued white made from Sauvignon Blanc is dense and mineral. It features the fresh scent of blossoms coupled with notes of waxy yuzu, complemented by a subtle oily texture perfect for pairing with food.

Artisanally produced in petite terracotta amphorae, it undergoes a wild fermentation on its skins for over a month. After a gentle whole bunch press, it matures in amphorae for a year. Presented in its natural, slightly hazy state, it's bottled without fining or filtering, with a mere hint of sulphites.
