Due to decades of erosion, the vineyards' lower regions possess thicker soil layers compared to the elevated areas. In exceptionally arid years, these low-lying zones benefit from enhanced water retention, resulting in grapes that mature more consistently and robustly than those in the upper, leaner terrains. Conversely, during wetter autumns, grapes in these depressions mature at a slower pace, exhibiting distinct characteristics from their counterparts.
Dorli-Muhr utilizes these distinct grapes for her regional “Carnuntum” wine, a composition of 65% Blaufränkisch and 35% Syrah.
Maintaining her dedication to natural processes, she avoids applying sulphur to the grapes, relies on wild yeasts for fermentation, and adopts gentle maceration techniques in expansive wooden fermenters without the intervention of mechanical tools. There's no artificial temperature control for the grapes or the must. Throughout the wine’s two-year maturation, only a single soutirage is performed, allowing the wine to age gracefully for the remainder of the period.
The outcome is a captivating wine, brimming with fruit, elegance, and inviting acidity. Its evolving character once the bottle is uncorked makes it a favorite choice for sommeliers to serve by the glass.
