The Kabaj estate, nestled in the rolling hills of Goriška Brda, Slovenia, has been crafting some of the country’s most celebrated wines since the early 1990s. This unique region, marked by a temperate climate, consistently yields wines that are dry, balanced, and often shaped by skin contact during fermentation.
After an extraordinary two-month maceration in traditional Georgian kvevri (amphorae), the Kabaj Konde underwent 14 years of maturation in French oak barrels using the sous-voile technique, inspired by wines from the Jura and southern Spain. A natural yeast veil preserved the wine from oxidation, allowing it to evolve a singularly complex and refined character. The wine was left without topping up for 14 years in barrel, really out of this world stuff!
The wine glows with a radiant amber hue, offering a deeply layered bouquet of candied orange peel, honeycomb, and ripe citrus, interwoven with herbal notes of marjoram, rosemary, and spruce. Subtle nuances of roasted almond, coffee grounds, tobacco, and a resinous balsamic spice add depth and intrigue.
On the palate, it is dry and textural, with a velvety, almost oily mouthfeel balanced by vibrant acidity and pronounced minerality. The finish is strikingly long, resonating with a spicy-balsamic freshness that lingers, leaving a lasting impression of elegance and complexity.
