Amber WineTillingham Qvevri White 2020
Glistening with a hazy golden hue, the wine's aroma carries a subtle smokiness intertwined with notes of melon and peach. Its palate echoes with stone fruit flavors, concluding with an earthy mineral touch, a gift from the Qvevri.
The Bacchus grapes, grown using conventional methods, underwent crushing and destemming. Post a brief maceration, they were pressed into two 400l Qvevris. Six months later, they were transitioned to stainless steel tanks. The Pinot Blanc, cultivated with minimal intervention/lutte raisonnée approach, was pressed with its whole bunch and moved to an 800l Qvevri. Exhibiting a characteristic slow fermentation pattern of its vineyard, it continued fermenting till the festive season. Another six-month tenure, and it too found its way to stainless steel. These two distinct wines were then harmoniously blended and aged in a foudre briefly. Using gravitational force, the wine was racked and bottled with a hint of added sulphur.
