Champagne Pierre Paillard
Sparkling WineChampagne Paillard Bouzy Grand Cru ‘Les Parcelles’
The Champagne Pierre Paillard Bouzy Grand Cru 'Les Parcelles' is a remarkable expression of the Bouzy terroir, crafted by a family with deep ties to the region, dating back to 1768. This cuvée is made from 80% Pinot Noir and 20% Chardonnay, primarily from the 2019 harvest, with a small portion of reserve wines. The grapes come from 22 meticulously selected plots within the Grand Cru village of Bouzy, celebrated for its chalk-rich soil and south-facing slopes that imbue the wine with both structure and finesse.
Fermented in oak barrels and aged for three years on lees, 'Les Parcelles' offers a complex nose of cherry blossom, ripe peach, and delicate honeycomb. The palate is vibrant, showcasing fresh fruit with a fine balance of crisp acidity and richness. With a minimal dosage of just 2 grams per liter, the purity of the fruit shines through, delivering a long, elegant finish. This Champagne pairs beautifully with seafood, poultry, or a creamy risotto, and has the potential to evolve gracefully in the cellar for years to come.
