Amarone stands tall as one of Italy's most distinguished red wines. Its inception stemmed from Valpolicella's winemakers' aspiration to amplify the richness, intricacy, and alcoholic content of their wines, since the indigenous varieties were perceived as somewhat feeble. Their ingenious method was the 'appassimento', a technique involving natural air drying.
For this specific Amarone, only the finest grapes are handpicked and laid out in 'cassette' to naturally dry for around 120 days. Post drying, these grapes are crushed, fermented, and matured in barrels ranging from medium to large. However, not every barrel survives this prolonged aging; only the elite get the Amarone label. This exquisite wine, rooted deeply in Valpolicella traditions, typically exhibits a slightly sweet profile and matures gracefully with time. It's advisable to decant this wine before enjoying.
