Balmy Nights White Schönburger 2022

Crafted exclusively from Schonberger grapes, the sole planting on the Australian mainland, the grape is a German hybrid of Pinot Noir, Muscat, and Chasselas, bred for early ripening and resilience against disease.

Sourced from organic vines at Ablington vineyard in the Hunter Valley, the grapes are harvested by hand at their most vibrant. They are whole bunch pressed straight into seasoned French oak, where they undergo natural primary and malolactic fermentations. The wine is then transferred to stainless steel to settle, before it is manually bottled, maintaining its purest form without fining or filtration.

This wine exudes pronounced floral notes, presents a bone-dry and textured palate, and is defined by its low alcohol content and a lively acidity. It reveals layers of grapefruit pith and lemon zest, with a hint of brininess and subtle nutty nuances.
