50% Malvasia, 50% field blend of Viognier, Riesling, Gewurztraminer, Muscat Blanc, and Sauvignon Blanc.
Fermented on skins in traditional clay vessels (táo guàn / 陶罐) for 30 days, with 6 month post-ferment marceration. Aged in neutral 225L oak barrels for 10 months.
Unfined, unfiltered, zero sulphur. White and yellow stonefruit, preserved jasmine, orange blossom. Grippy tannins with lively, saline acid drive.

Silver Heights is a family-owned winery in Ningxia, founded in 2007 by Emma Gao and her father, committed to making artisanal wines that demonstrate craftsmanship, integrity and passion. All wines use indigenous yeasts, minimal filtration, and minimal sulphites.
Emma Gao’s winemaking career started high, with vintages at Bordeaux’s Château Calon-Ségur in the early 2000s. Born and raised in Ningxia, Emma and her family established Silver Heights in 2007, with the goal of bringing quality and individuality to their wines made in the foothills of the Helan Mountains.
After a spinal injury was alleviated by traditional medicine, rather than surgery, Emma brought a holistic perspective to her winemaking, converting the vineyard to follow biodynamic farming methods following the 2017 vintage.
By balancing biodynamics with the Chinese lunisolar farming calendar, Gao draws from eastern and western wisdom to create a unique viticultural environment that is a true representation of Ningxia.
