Chouette Fabric Chenin Blanc 2022

Tom Daniel is a winemaker who is contributing to the development of Perth's Swan Valley wine region. He has taken an approach that departs from the heavy, high-alcohol wines that were popular in the past decade, instead choosing to create fresher, higher-acid, and more enjoyable wines under his Chouette label.

Daniel uses a minimal intervention approach and picks slightly earlier, which allows him to work with older vines from his family and surrounding vineyards, resulting in some of the finest wines from the Swan Valley.

The Chouette with a distinct lemony flavor and a fine line of saline acidity. It has a hazy texture that is comparable to cloudy apple juice or real lemonade, but it is dry and refreshing.
