Yiannis Paraskevopoulos diverges from the conventional use of savatiano and opts for roditis in crafting his Retsina. The grapes are meticulously sourced from a vineyard situated at an elevation of 3,280 feet, contributing to the creation of a wine that exudes vibrancy and freshness. It unfolds on the palate with lively notes of lemon zest and the essence of freshly cut herbs. The addition of pine resin imparts an additional layer of invigorating allure, offering a high-toned note reminiscent of mastikha. The wine's structure is further anchored by a seashell minerality, resulting in a strident and original character. Paired excellently with spanikopita or tyropita, Greek cheese pies, this Retsina embodies a modern approach to winemaking. The meticulous addition of pine tree resin into fermenting must from selected Roditis grapes, sourced from the hills surrounding Corinth in Peloponnese, results in an elegant and refreshing wine. Ritinitis Nobilis strikes a perfect balance between pine and grapes, offering a delightful companion to Greek "mezedes" and Spanish tapas. Best enjoyed at approximately 8º-10ºC, this wine showcases the harmonious fusion of tradition and modernity.
