The Champagne Chantemerle Blanc de Noirs Extra Brut by Julien Prélat is made from 100% Pinot Noir grapes. These grapes come from vineyards that are at least 30 years old and are grown in organic conditions on calcareous soils. The wine undergoes spontaneous fermentation with native yeasts and is bottled without filtration. It then rests on lees for 2 months in stainless steel vats.
