Moondarra Conception Bianco 2021

This intricate blend is composed of Picolit, Mendoza clone Chardonnay, and Ribolla Giallo, combined with Picolit offshoots crossbred with Chardonnay and Ribolla. Additionally, hints of Pinot Bianco, Pinot Grigio, and Friulano enhance this rich medley.

The meticulously hand-harvested fruit undergoes crushing and natural skin fermentation. Post-fermentation, it's left for skin maceration for around a month. To retain its crisp, apple-like acidity, sulphur is introduced post-primary fermentation, preventing malolactic transformation. The wine is then transferred to seasoned barriques, aging on lees. The water-independent fruit imparts a pronounced flavor intensity, counteracting the skin-derived tannin. Come spring, it's bottled in its pure form, sans fining or filtration.
