Stéphane Tissot stands at the vanguard of championing natural wines and unique terroirs. Drawing upon techniques honed in Australia and South Africa, he melds global insights with an unwavering commitment to reduce yields and practice meticulous small-batch winemaking. Predominantly focused on clay and limestone terrains, Tissot champions biodynamic farming, ensuring limited yields averaging around 30 h/l per hectare. Natural fermentations lead the way, and the resultant still wines are unfiltered, with minimal or no SO2 intervention. A hallmark of his creations is the lively fruit essence.
Tissot isn't just renowned for his terroir-centric Vin Jaune and other Jura offerings; his sparkling wines demand attention as well. The BBF Cremant du Jura is an outstanding example, warranting comparisons with France's elite grower Champagnes. Stemming from the 2018 vintage, it's a harmonious blend of 50% Chardonnay, 40% Pinot Noir, 5% Poulsard, and 5% Trousseau, masterfully bottled without dosage in June 2021.
