Toc playfully nods to Côt, a distinctive varietal crafted by the organic duo, Simon and Philippe Tessier, in their Sologne estate. Though Côt, better known as Malbec, is recognized in the Cheverny AOC, it mandates blends. Hence, this wine finds its classification as Vin de France. This region marks the northernmost boundary for Malbec, resulting in softer tannins and a signature blueberry-infused acidity.
Following the estate's signature winemaking method, the grape undergoes semi-carbonic maceration for approximately 15 days before maturing in expansive oak barrels. The 2021 vintage emanates hues of deep purple, characteristic of Malbec, while exuding aromas of violets, elderberry, Assam tea, and hints of dried thyme. On tasting, it introduces itself with a vibrant, rounded note followed by subtle tannins. With only 12% alcohol and minimal SO2, this wine delights with its lush and juicy demeanor.
