From select Yarra Valley sites, the 2021 vintage was cool and long, perfectly suited to Cabernet Sauvignon and its Bordelais compatriots. Fruit was handpicked and fermented as whole berries with gentle extraction before élevage in seasoned oak, allowing purity of fruit to lead. The wine shows graphite and cassis with redcurrant brightness, tobacco leaf, and cedar, framed by finely etched tannins and a savoury finish that speaks of Yarra’s gravelly soils. Built with poise rather than weight, this is a wine that recalls the great tradition of restrained Australian Cabernet.
