Halcyon Days Musqué Chardonnay 2023

“We have been experimenting with the 809 Chardonnay cone for a few years now for Halcyon as a skin fermented white and this year it showed elevated muscat character which we love. So instead of blending it into Heliacal Rise we decide to bottle it on its own to share this expression of Chardonnay with you.

All grapes were handpicked with the clone 809 skin fermented on skins and the clones 121 and 15 whole bunch pressed. The 809 was on skins with a very gentle daily cap submerged by hand for 7 days before being pressed to tank topped with the 121 and clone 15. Completed full malolactic fermentation in tank then aged on lees in tank till bottling.”
