Domaine Goisot Bourgogne Aligoté 2023

From the Saint-Bris area in the northern reaches of Burgundy, Domaine Goisot farms Aligoté on Kimmeridgian limestone soils continuous with those of Chablis. The domaine is certified organic and biodynamic, with hand harvesting and low yields. Fermentation is with indigenous yeasts, followed by élevage on fine lees in tank and older oak. The 2023 shows lemon, green apple and a light saline note, with a firm acid line and a clean, mineral finish that reflects the limestone base.
