From parcels on limestone-rich soils around Cravant-les-Côteaux, Domaine Bernard Baudry works exclusively with Chenin Blanc for its white Chinon. Fermented with indigenous yeasts and raised on fine lees, primarily in tank with a measured use of older oak, the 2023 shows green apple, pear and citrus with notes of quince, chamomile and a light waxy edge. The palate is direct and structured, with a firm acid line and a persistent, lightly saline finish that reflects the limestone soils.
