Produced in Scotland by Dark Matter Distillers, this is built on Caribbean molasses spirit and finished with a tightly defined spice profile rather than a broad, sweetened style. The core components centre on ginger, allspice and long pepper, with additional botanical detail layered in during maceration and blending. The result is direct and structured: molasses, treacle and dark sugar sit alongside a firm line of spice, with ginger heat and pepper carrying through the palate. It is dry by category standards, with a controlled sweetness and a persistent, warming finish.
