Château Thivin's historic vineyard, established as early as the 14th century, is evidenced by an inscription dating back to 1383 on a lintel in a small cave. Located at the base of Mont Brouilly, this enclosed vineyard benefits from a south-west orientation. The soil here is relatively deep, characterized by a mix of pink granite and the magmatic rock typical of the hill.
The grapes are partially destemmed and undergo grid maceration for 10 to 14 days, followed by aging in oak barrels for 7 to 9 months. The resulting wine has a garnet red color with bluish tints and presents a bouquet of iris and peonies. On the palate, it offers a round texture with notes of black fruits and spices, leading to a long, silky finish. This full-bodied wine reaches its prime between 2 and 7 years of age, although it can age gracefully up to 10 years.
