The Cabernet Sauvignon-Merlot 2015 comes from estate vineyards in Geelong, produced by Bannockburn Vineyards. The blend reflects the cooler maritime conditions of the region, with cabernet providing structure and merlot contributing mid-palate weight.
The vintage delivered even ripening, allowing for balanced tannin development without excess weight. Fermentation and élevage are handled in a measured way, with oak used to support the wine rather than dominate it.
Blackcurrant, plum and dried herbs lead, with cedar and a light savoury edge. The palate is medium-bodied, with firm but resolved tannins and a steady, structured finish.
