From Santa Barbara County, Two Wolves Wine works with Cabernet Sauvignon grown in warm inland sites, farmed organically with low yields and careful canopy management. Fruit is hand-harvested, fermented with indigenous yeasts, and aged in French oak. The 2019 shows blackcurrant, blackberry and dark plum with cedar, tobacco and a light herbal note. The palate is structured, with firm, well-shaped tannins and a persistent, savoury finish.
