Yellow WineLethbridge Vin Jaune Yellow NV
Drawn from a 0.1ha Savagnin planting in Waurn Ponds in Geelong, originally thought to be Albariño. The wine is based largely on the 2013 vintage and made as an homage to Vin Jaune, with extended ageing under flor.
Fermentation is followed by around seven years in barrel without topping, allowing a voile to form and drive oxidative development. The wine is bottled without fining or filtration.
Bright gold with green tinges. Walnut, curry spice and preserved citrus lead, with a gently oxidative, nutty profile. The palate is dry and textured, with a saline line and a long finish.
