JP Trijsburg Pinot Gris 2025

Expressive and juicy Pinot Gris from a cool site in Central Victoria, made by Jean-Paul Trijsburg. A slow press into neutral French oak barrels for fermentation and ageing gives this wine a subtle pink flush, and a touch of spice and phenolic grip. Gentle green apples, quince, and florals fill out a rounded, medium bodied palate. A fresh, fun wine with no lack of clarity or intention. 

Jean-Paul Trijsburg worked his first vintage in Burgundy in 2007, going on to study wine-making in France, and work around the world. He aims to make wines that express their variety and origin, and to this end uses indigenous yeasts, minimal sulphur, and gentle extraction. He leases a vineyard of Pinot Noir in cool-climate Ballarat, and sources high quality fruit from across Victoria to make thoughtful, small-batch wines.
