Ibi Elvi 2020

Elvi is one part Riesling and two parts Sauvignon Blanc, fermented and matured for 9 months on grape skins and Dolgo crabapple skins in the Revel Cidery in Guelph, Ontario. The combination of structural apple tannins and chewier grape tannins gives the wine a refreshing bitterness reminiscent of a Pilsner or saison beer. Tea-like grip and effervescent chalkiness, with fennel, guava, and stone fruit notes.

Ibi is the natural wine side project of Ontario's Revel Cider. The focus is on rare and hybrid grape varieties from small plots of land, fermented with minimal intervention at their cidery.
