From Hampshire in southern England, Hattingley Valley produces this traditional method blend of Chardonnay, Pinot Noir and Pinot Meunier from chalk and flint soils. Fruit is hand-harvested, with base wines fermented in stainless steel and a portion in older oak, followed by secondary fermentation in bottle and extended lees ageing before disgorgement. The NV shows green apple, lemon and white peach with notes of brioche and almond. The mousse is fine and persistent, with a bright acid line and a clean, structured finish.
