Domaine Jaeger Defaix Rully 1er Cru Rabourcé Blanc 2023

From the Rabourcé premier cru in Rully, Domaine Jaeger-Defaix farms Chardonnay on stony limestone with a thinner topsoil, giving a tighter, more linear profile. The domaine works along organic lines, with hand harvesting and careful sorting. Fermentation is with indigenous yeasts, followed by élevage on lees in a mix of tank and older oak. The 2023 shows lemon, green apple and white peach with a light almond note. The palate is direct and structured, with firm acidity and a clean, mineral finish shaped by the site.
