From the Les Cloux premier cru in Rully, Domaine Jaeger-Defaix farms Chardonnay on limestone-rich slopes with a strong marl component. The estate is run by Hélène Jaeger-Defaix and Didier Defaix, with vineyard work following organic principles. Fruit is hand-harvested, fermented with indigenous yeasts, and aged on lees in a mix of tank and older oak. The 2023 shows citrus, white peach and green apple with notes of hazelnut and a light saline edge. The palate is structured and precise, with a firm acid line and a persistent, mineral finish.
