It’s at the meeting point of Watervale, Polish Hill and White Hut. Fermented in open top fermenters, 5 weeks on skins. Basket pressed, settled over night and racked to old wood for MLF (no SO2 until bottling). Malbec 25% - From the Hanlin Hill vineyard (famed for Petaluma Riesling site). 3 weeks on skins post ferment. Sealed top.
