From the limestone plateau and clay slopes above the Gironde in Blaye, Château Peybonhomme-les-Tours farms this cuvée biodynamically. The wine is based on Sauvignon Blanc with Sémillon, fermented with indigenous yeasts and raised on lees in a mix of tank and older oak. The 2021 carries citrus, green apple and white peach with notes of fennel, citrus peel and a light saline edge. The palate is direct and structured, with a firm acid line and a clean, persistent finish shaped by the limestone soils.
