Ben Haines Blanc de Now Undisgorged Sparkling Pinot Noir 2019

This sparkling Pinot Noir is drawn from vineyards in the Yarra Valley, made by Ben Haines. Bottled undisgorged, it remains on lees in bottle, preserving freshness and texture while allowing the wine to evolve slowly.

Fermentation follows traditional method, with secondary fermentation in bottle and extended lees ageing. Without disgorgement, the wine retains a faint cloudiness and a more tactile, lees-driven profile.

Red apple, cranberry and citrus lead, with brioche and a lightly savoury edge. The palate is fine and energetic, with persistent mousse, bright acidity and a long, textural finish.
