Estate Argyros' Cuvée Monsignori embodies their interpretation of the quintessential Santorini Assyrtiko. Sourced from ancient vineyards, with vines over two centuries old producing sparse yields, this wine is a testament to longevity and tradition. Fermentation takes place in stainless steel vats, a portion of which relies on natural yeasts, and it is meticulously kept at low temperatures. Subsequent aging for ten months on fine lees in the same tanks lends the wine its distinguished character, depth, and persistence. Patience rewards the connoisseur, as roughly four years of bottle aging are required for the wine's complexities to emerge fully, and its integrity remains intact for over a decade post-vintage.
