From the Côteau de l’Épinet in Viré-Clessé, this cuvée comes from a well-exposed slope of limestone and marl, where lighter soils and elevation tend to emphasise line and aromatic precision. The Bonhomme family, now led by Agnès Bonhomme and Aurélie Bonhomme, farms organically, with hand harvesting, native yeast fermentation and élevage on fine lees in a combination of stainless steel and older oak. The 2021 vintage, defined by a cooler, more classical profile, is expressed here with restraint and clarity: lemon, green apple and white flowers, with firm acidity and a persistent, mineral finish shaped by the limestone soils.
