Direct pressed and fermented in seasoned French oak hogsheads and matured on lees for 9 months. It was transferred to stainless steel for a further 7 months of maturation on lees before bottling without fining or filtration
“This is bell ring clear. It’s kind of gentle but vividly fresh. Green apple crunch, tart lime juice zestiness, an undertow of almond and hazelnut but gently there with cooling, briny minerality on show. It does savouriness well, it does refreshment well. It has this distinct sense of complexity and detail in the fruit profile, light seasoning of spice, that mineral vein that lands at the lip-smacking end of the spectrum.
