“A selection of aromatic and textural white varietals grown in Central Victoria’s diverse viticultural regions including—Great Western, Pyrenees & Hanging Rock, Macedon. The cépage consists of Riesling (50%), Viognier (25%) and Sauvignon Blanc (25%); all introducing their own unique lifted florals and textures thanks to differing pick times and the use of individual ferment techniques/vessels. Lemon peel in the tropics. Malo and sugar dry. This wine has seen a touch of So2 at racking and is stable. 25% of the cuvée comes from organic sources which I will endeavour to expand on as the business matures.”
