Marcell Kustos is a wine scientist, turned sommelier, turned winemaker. Under the LVDO label he makes thoughtful wines that reference historical Australian styles, Eastern European blends, and bold experiments.
This wine is a nod to Jura, filling a gap Marcell saw in the market for an oxidatively-made Australian Chardonnay that leans savoury, textural, and briny. It's made from two clones of Chardonnay sourced from a single vineyard in Forreston in Adelaide Hills. One parcel saw 3 hours of skin contact, and the rest were pressed directly into a Hogshead barrel for fermentation. After resting on fine lees in barrel for 15 months, the wine was bottled with a minimal addition of sulphur.
