Pinot Grigio has pinkish skin. Therefore, if the skins are left in contact with the juice for a while, the resulting wine tends to have a reddish hue rather than a traditional white. This spectrum of colors, ranging from the most intense red to other shades, is something I have observed. The Ramato here, an Italian term meaning copper, indicative of its color, has been allowed eight hours of skin contact. It exudes aromas reminiscent of wild strawberries, Jazz apples, unripe cherries, and mandarin zest. On the palate, it offers a notable phenolic presence, enveloping flavors of pulpy, slightly salty red apple and cherry in the center. The wine is characterized by its succulent acidity and commendable length, making this Ramato a pristine example of its kind.
