Originating from venerable eighty-year-old vineyards rooted in clay and granite soils, the Clos de la Roilette Fleurie Cuvée Tardive boasts pure Gamay grapes from the renowned AOC Fleurie. Committed to sustainability and tradition, these vines are nurtured in harmony with nature. Once the grapes attain peak ripeness, they are meticulously handpicked and swiftly transported to the winery. Here, they undergo fermentation as whole clusters using indigenous yeasts in open neutral wooden vats, under a submerged cap. An 18-day maceration is followed by a year's aging in seasoned foudres before the wine is bottled.
