Since 2008, Aurélien Palthey, the esteemed grandson of André Bonhomme, has spearheaded the winemaking endeavors of the vineyard. His expertise, honed through rigorous training in both Alsace and Meursault, is complemented by the collaborative efforts of his family, including his mother Jacqueline (André's daughter), father Eric, and brother Johan. The vineyard's predominant emphasis is on white wines, specifically Chardonnay, which accounts for 99% of their production. These wines are celebrated for their pronounced minerality and robust acidity.
The venerable vines, boasting an average age of 55 years, yield fruit that's diligently hand-harvested. Post-harvest, whole bunches are subjected to airbag pressing, leading to extended fermentations with indigenous yeasts. The winery employs a combination of stainless steel and oak barrels in the winemaking procedure, tailoring the élevage duration to each distinct cuvée. To preserve the inherent freshness and acidity, bâtonnage is typically eschewed.
