Sparkling WineHeinrich Oh When the Saints Pet Nat Sankt Laurent 2022
This pétillant naturel wine is a blanc de noirs, made entirely of Austrian indigenous red grape Sankt Laurent. Heinrich is based in Leithaberg, Austria, with biodynamically farmed vineyards surrounding the vast and shallow Lake Neusiedl. These grapes are grown on an east-facing slope, where mica and schist sparkle in the sun and absorb heat to radiate back in to the vines at night. The grapes are gently whole bunch pressed, and the wine is bottled before the end of fermentation, gaining a lively sparkling mousse.
Oh When the Saints Pet Nat has a golden colour, with aromas of apples and pears followed by cherries and raspberries. There's subtle yeast and creaminess, and slight sweetness balanced by refreshing lemon acidity. A delicate and invigorating ancestral method sparkling.
