This sparkling rosé, crafted using the méthode ancestrale, features Nebbiolo from Heathcote, hand-harvested in mid-February. It underwent co-pressing and natural fermentation, spending 10 days with Fiano and Greco skins. The wine was then bottled in early March and disgorged in September, having matured for 7 months on lees without any additions or sulphites.
