Tissot Arbois Savagnin Ouillé Traminer 2020
Savagnin, simply referred to as Traminer in Austria and Germany, is an ancient grape variety with a history spanning thousands of years. Stephane Tissot matures this wine in older barrels, employing techniques similar to those used for chardonnay. The result is a wine of formidable strength and textural intricacy; it boasts notes of dough, hay, and a hint of salinity, all complemented by a satisfying "chewiness," along with remarkable density and length. Its acidity, opulence, and depth contribute to its potent character.
Arbois, within the Jura region, is known for a wide range of red, white, sparkling and rosé styles, including the Jura's iconic flor-aged Vin Jaune. Wines that aren't aged under flor, such as this Savagnin, are labelled Ouillé, from the word for ullage; the process of topping up the barrels so the film of flor yeast can't develop.
