Derived from 80+ year old grapevines in the Maule region, this Pais 'Salvaje' (meaning wild) is a product of careful handpicking. The white bunches are harvested using ladders against the trees, with vines reaching up to 5 meters high, and average vine age in excess of 120 years! Fermented in clay amphora, the wine is bottled unfiltered and unfined. The result is a crisp white wine with lively green apple notes, white florals, and a refreshing acidity, making it an excellent choice for enjoying as an aperitif or paired with fish and seafood.
