However, their presence in Nuits-Saint-Georges, a village notable for its absence of grand cru sites, has meant these wines remain somewhat of a hidden gem for many enthusiasts. Despite this, Chevillon's offerings are among the most prestigious in Burgundy, consistently excelling regardless of the vintage's challenges, a feat matched by only a select few esteemed estates throughout the Cote.
Currently, Robert Chevillon's sons, Bertrand and Denis, have taken up the mantle, embodying the same fervent commitment to showcasing the pinnacle of Pinot Noir. Their approach involves rigorous attention to detail in the vineyards throughout the year, with grapes being handpicked, meticulously sorted, and de-stemmed. This is followed by a cold maceration in vats for 5-6 days and a spontaneous fermentation process that spans 2-3 weeks. The wines then undergo maturation over 15 to 18 months in barrels, utilizing a blend of 30% new and 70% once-used barrels.
