Timo Mayer Yarra Valley Chardonnay 2025

Among Yarra Valley winemakers, German-born Timo Mayer needs almost no introduction. Bombastic and wild, he crafts precise, ethereal, minimal-intervention wines from his close-planted Bloody Hill vineyard. Characterised by the presence of whole bunch fermentation and a restrained use of oak, his range includes Pinot Noir, Grenache, and Syrah that are impeccably structured, detailed, and compelling.

Mayer's first estate Chardonnay since the vineyard was replanted on rootstock in 2021, this wine is a masterclass in precision and restraint. After fermentation in old hogshead barrels, the wine was moved to stainless for maturation, seeing no malolactic conversion and no lees stirring. It's all about fruit purity, and shows yellow apple, citrus, and pear, with an undercurrent of cashew and salted nougat. Lean and focused with mineral tension, this is a razor sharp chardonnay that can be enjoyed now or cellared for years to come.
