White WineKristinus Olivér 2023
Olivér is a breezy, refreshing white wine from the southern shores of Lake Balaton, consisting mainly of the Hungarian grape Irsai Olivér. Biodynamically farmed vines on sandy, loess-rich soils give an easy, aromatic profile: elderflower, grape must, citrus peel and soft stone fruit. The grapes are picked early, fermented spontaneously with some whole bunches and brief skin contact, then left on fine lees in steel and amphora before being bottled unfined and unfiltered with minimal sulphur. The result is lightly hazy, and dry, with bright acidity, gentle grape-skin grip and a very drinkable, summer-table kind of charm.
