Novum Marlborough Rosé 2025

Produced by William and Rachel Hoare, Novum is a small Marlborough estate established in 2015, specialising in Chardonnay and Pinot Noir from mature, carefully managed vineyards. The 2025 Rosé is made entirely from Pinot Noir grown at Quarters Vineyard in the Brancott Valley, where close-planted vines established approximately thirty years ago are dry-farmed when seasonal conditions permit. Following two challenging vintages, 2025 brought favourable growing conditions, with warm, sunny weather in March allowing the grapes to reach full flavour maturity while retaining acidity. The fruit was hand-harvested, destemmed and crushed, with a portion of juice drawn from Pinot Noir fermenters using the saignée method. Fermentation took place in stainless steel at approximately 14°C, preserving the wine's delicate fruit character. Pale salmon-pink in colour, it offers aromas of wild strawberry, raspberry, white peach and gentle spice. The palate is dry, fresh and finely textured, with juicy red berries, subtle stone-fruit richness and a long, lively finish. A carefully considered rosé with the concentration and structure to accompany food.
