The Apricity Vermentino, cultivated by the Chalmers in Colbinabbin, underwent a unique process. After 4 days of skin contact with the destemmed berries, it was pressed and moved to old French oak barrels for fermentation. There, it rested on lees for a period of 8 months. When bottling time arrived, the wine was kept in its most natural state: unfiltered, unfined, with only a trace of added sulphites.
